Today is Tuesday, and I had tacos for lunch. Simple. Efficient. Homemade.

Sunday, at about 3pm, I started the process of making carnitas.

Then, as it fell clean off the bone, I shredded the hell out of it. Shredded bits of pork went into a non-stick pan, and were fried up.

In a medium sized bowl, a lot of diced red onion soaked in Key Lime juice.

And flour tortillas wrapped in tinfoil.

Yes, I'll make these again later and post pictures. I'll probably remember the cilantro and the queso fresco and make some absurd orange margarita with a wheat beer stuffed into it, but right now, I'm just happy for the simple tacos. Can't go wrong.
